U Minh’s fermented fish hot pot (U Minh District, Ca Mau Province, Vietnam) set an Asian record value for Cuisine and Specialties. This meal is popular in the Mekong Delta region of Vietnam, but the region around U Minh, Ca Mau, is where it gets its most distinctive flavor. A range of freshwater fish species, including snakehead and anabas, pork belly, fermented snakeskin gourami and snakehead, and a variety of wild plants from the U Minh forest are all harmoniously incorporated into the fermented fish hot pot. This meal has a tasty, enticing and unusual flavor thanks to the rustic yet distinctive preparation. The record was confirmed on August 22, 2022.
