 Ingredients :

  •  12 mint leaves (Pudina)
  •  8 basil leaves (Tulsi)
  • 4 green cardamoms (Elaichi)
  • 2 gms cinnamon (Dalchini)
  • 20 gms ginger (Adrak)
  • 20 gms of jaggery (Gur)

Procedure :

  • Take 4 cups of water in a tea-pan.
  • Add all the ingedients after a boil .
  • Simmer it for 10 mins.
  • Add a dash of lemon juice and serve hot.

 

                                             Hunza Snack

Ingredients :

  • 1carrot
  • 1 cucumber
  • 1tomato
  • 100 gms cabbage
  • 10 to 15 leaves of  spinach
  • lemon to taste

Procedure :

  • Take spinach and keep it in a steamer for 3 to 4 minutes.
  • Now take all the ingredients and chop them finely .
  • In a bowl add chopped vegetable and spinach
  • Add 2 tea spoons of  lemon juice.
  • Mix well.

 

Apple Spinach Orange Smoothie
Ingredients:

  • 1 cups spinach,
  • 1 apple chopped and peeled
  • 1 oranges peeled
  • 1 cup raw coconut milk
  • Honey to taste

Procedure:

  • Take spinach and chop it finely.
  • Now take apple and  oranges add them into the blender.
  • Add coconut milk also ,blend till you get a smooth consistency .
  • Honey can be added according to the taste .
  • Smoothie is ready to drink.

                                                                   Almond Milk

Ingredients:

  • 1 cup almonds
  • Muslin cloth
  • Strainer
  • Honey(according to taste)
  • 5 cups of water

If you need to boost the magnesium, potassium or vitamin E in your diet,then almond milk is very good option as an alternative milk in a raw food diet.

Procedure

  • Soak a cup of almonds overnight.
  • Peel almonds.
  • Blend almonds in blender with 5 cups water until liquid and smooth.
  • Strain milk through  a muslin cloth .
  • You can add honey as per taste .
  • The leftover can be used in sprouts ,salads ,raita etc.

 

                                              Coconut Milk

    Ingredients:

  • 1 fresh coconut (shredded)
  • 3 cups of lukewarm  water
  • Honey
  • 4 green cardamoms
  • 2 gm cinnamon

Procedure :

  • Put 2 cups of shredded coconut into blender.
  • Pour the  lukewarm water into blender.
  • Slowly blend till smooth.
  • Wait for at least 15 minutes to get settle down coconut at bottom.
  • Take a strainer and sieve the coconut  milk in a container.
  • Add flavorings and sweeteners to enhance taste like cardamom,cinnamon and honey .
  • Pour  coconut milk in a glass jar and enjoy it .

 

                                                  Cashew Milk

Ingredients:

  • 1/2 cup raw cashews
  • Water as per requirement
  • 2 tsp honey
  • Sieve (jaali)

Preparation:

  • Cover raw cashews in water and allow to soak for at least one hour. Drain and rinse.
  • Place soaked cashews and 2 cups water into a blender and process until smooth,
  •  Add honey also while blending.
  • You  can use more or less water to vary the thickness of your raw cashew milk, depending on your choice.
  • Now strain the milk with a sieve and pulp of cashew will be left .
  • Milk is ready to drink and pulp can be used in making salad, dips, smoothies etc.


                          Summer Tomato, Onion & Cucumber Salad

Ingredients:

  • 1 teaspoon honey
  • 1/2 teaspoon freshly ground white pepper
  • 2 medium cucumbers
  • 4 medium tomatoes
  • 1 medium onion
  • 2 tbs coriander

Preparation:

  • Peel off cucumbers and slice them into rounds.
  • Now peel off onion and cut it into halve and very thinly sliced.
  • Take tomatoes and cut them into 1/2-inch pieces.
  • Whisk honey and pepper in a large shallow bowl.
  • Add  cucumber ,onion and tomatoes to the dressing, gently toss to combine.
  • Just before serving, add coriander and toss again.

                                      Hawaiian Smoothie

Ingredients:

  • 1 cup peeled and chopped fresh pineapple
  • 1/2 cup peeled and chopped papaya
  • 1 tbs lime juice
  • 3 tbs pomegranate juice
  • 4 to 5 ice cubes

Preparation:

  1. Place all ingredients in the order listed into the blender.
  2. Now blend all ingredients until smooth.
  3. Smoothie is ready to drink.

                                                 Red Pearl Salad

 Ingredients:

  • 6 or 7 bananas
  • ¼ of a whole pineapple
  • 1 bunch of grapes
  • 2 oranges
  • Some seeds of pomegranate
  • 1 tsp black pepper
  • 2 tsp raw honey
  • Powdered fresh coconut(optional)
  • Two -three leaves of mint

Procedure :

  • Slice the bananas .
  • Peel, core, and chop the pineapple.
  • Peel oranges and slice them into half.
  • Take  grapes and cut them into half.
  • Next, toss the bananas, oranges,grapes ,pomegranate seeds and pineapple into a large bowl.
  • In another small bowl, mix together the fresh coconut , honey ,and a pinch of black pepper.
  • Drizzle this  mixture over the bananas, pomegranate seeds ,oranges ,grapes , pineapple etc , and sprinkle fresh coconut mixer on top also.

                                       Banana Black Grape Smoothie

  • 1 cup of cashew milk
  • Honey to taste
  • A medium sized banana
  • 200 gm black grapes

Procedure:

  • Take cashew ,milk in a blender .
  • Now add banana and grapes into the blender.
  • At last add honey to taste.
  • The smoothie is ready to drink.

                                                             Cinnamon Tea

Ingredients :

  • 1 tsp cinnamon
  • Lemon to taste
  • 1 cup water
  • Honey to taste
  • Ginger to taste
  • 5 to 6 twigs of mint

Procedure:

  • Take I cup water in a pan and boil it .
  • Now add cinnamon,ginger, mint leaves .
  • After 5 to 7 minutes ,pour the liquid into the cup and add honey and lemon to taste .
  • Serve hot.

                                                 Banana Spinach Shake

Ingredients:

  • 1 big spoon chopped spinach
  • 1 banana
  • ½ tsp cinnamon powder
  • ½ cup  almond milk
  • ½ tsp raw honey

Procedure:

  • Take chopped  spinach and steam it for 2 to 3 minutes ,
  • Mix banana and almond milk in a blender  well.
  • Now add steamed spinach into the blender .
  • Later on add ½ tsp cinnamon and ½ tsp raw honey in it and drink it.
  • Honey quantity can be changed,according to taste .

                                                    Chikoo  Shake

Ingredients :

  • 2 chikoos
  • 100 ml cashew milk/coconut milk
  • 1 tsp honey

Preparation:

  • Peel and discard the seeds of chikoos.
  • Blend it with a little cashew milk/coconut milk  and honey.
  • Then add the rest of the milk and chikoos together.
  • Shake is ready to relish.

                                        Colorful Broken Wheat Salad

Ingredients:

  • 1 cup broken wheat (dalia)
  •  2 cups hot water
  • 1/4 cup finely chopped carrots
  • 1/4 cup finely chopped tomatoes
  • 1/4 cup finely chopped capsicum
  • 3 to 4  mint leaves (pudina),chopped
  • 1/4 cup chopped spring onion greens
  • 1/2 tsp lemon juice
  • 2 spoon coriander leaves
  • 1/4 tsp roasted garlic powder(take the garlic pieces and keep them on hot tawa( simmer),toss them   for 3 to 4 minutes and after removing from the tawa  crush it and make it’s powder  )

Procedure :

  • Take 1cup dalia in a bowl and add 2 cups of hot water in it and leave it for 15 to 20 minutes.
  • After 15 to 20 minute ,you will observe that the dalia will be soft and water is  absorbed by dalia .
  •  Now mix together  rest of the  ingredients except lemon and coriander.
  •  At last  add lemon juice, coriander leaves and  toss lightly and serve  it .

                                             Smashing Pumpkin Smoothie

Ingredients:

 

  • 300 gm pumpkin pulp
  • Honey 20 gm
  • Water according to taste
  • 100 ml cashew milk/coconut milk
  • Ice (optional)

Preparation:

 

  • Put the pumpkin in a blender and make a puree.
  • Now add cashew milk/coconut  and honey according to the taste.
  • Ice can be added at last .

 

 Walnut Raisin Balls

Ingredients:

  • ½ cup walnuts
  • ½ cup raisins
  • 6 soaked dates(2 to 3 hrs)
  • 1/2 cup fresh shredded coconut

Procedure:

  • Take walnuts at first and mix it in a blender.
  • After that ,add soaked dates and mix well .
  • While blending add 1or 2 tsp shredded coconut .
  • At last add raisins and blend it well.
  • Now you can make balls out of this mixture.
  • Take the rest of the shredded coconut in a plate,spread it and  roll  the balls  over it.
  • Walnut raisin balls are ready to eat .

Mix Vegetables Bowl

  • one medium sized capsicum chopped
  • One medium sized tomato chopped
  • One small sized onion grated
  • One medium sized carrot grated
  • one medium sized beetroot grated
  • Hand full of sprouts(moong daal)
  • a pinch of black pepper powder
  • One tbs of lemon juice

Procedure:

  • Take all the vegetables into a bowl.
  • Add moong daal sprouts also .
  • Add black pepper powder, lime juice and mix well.
  • Vegetable salad is ready to serve .

                                        Carrot Salad

Ingredients:

  • 1 small sized carrot
  • 1 small sized beetroot
  • 1 small sized pomegranate
  • Lime juice-1tbs
  • Green chillies-2
  • Asafoetida-a pinch(hing)
  • Coriander leaves-to garnish
  • Roasted mustard seeds-1tsp (take the mustard seeds and keep them on a hot tawa,simmer for 3 to 4 minutes and after removing from the tawa ,it’s ready to use)

Procedure :

  • Chop carrots, beetroot and chillies finely.
  • Peel off pomegranate and take out seeds.
  • Mix all the items in a bowl and sprinkle lime juice, asafoetida .
  • Season with roasted mustard seeds  and garnish with coriander leaves.

                                             Soaked Moong Dal(Snack)

Ingredients:

  • Moong dal-1cup
  • Green chilli-1
  • Lime juice according to taste
  • 1 medium sized  carrot
  • 5 to 6 twigs of coriander

 Procedure:

  • Soak the moong daal for three to four  hours .
  • After 3 to 4 hours ,strain the moong daal .
  •  Transfer it into a mixing bowl.Add grated carrots to the daal .
  • Add lime juice,chopped green chillies,coriander  and mix well.

                                                    Tomato Soup

   Ingredients:

  • 4 ripened large tomatoes
  • One spring onion
  • Few garlic pods(2-4)
  • One small carrot
  • Black pepper powder
  • Basil leaves
  • Soaked Cashew-5 to 6 (soaked 2-3 hrs)

Procedure:

  • Take tomatoes and steam it in a steamer for 5 to 6 min , after that peel off the tomatoes.
  • Now chop spring onion and carrot into small pieces.
  • Blend vetetables,steamed tomatoes,galic,basil leaves.(Takeout 1 tsp steamed tomato for garnishing at last .)
  • Add soaked cashews into the blender.
  • Add water to make consistency for the soup.
  • At last add black pepper.
  • Sprinkle steamed tomatoes on the top and serve hot .

                                              Cucumber Soup

Ingredients :

  • 1 medium sized  cucumber
  • 1 capsicum
  • 1 clove of garlic
  • 5 to 6 coriander leaves
  • 5 to 6 basil leaves

Procedure:

  • Put all the ingredients into blender and blend till a  smooth paste .
  • Place it  in a bowl.
  • Decorate  with cucumber slices and basil leaves on the top and serve .

                                Carrot and Radish Salad

Ingredients:

  • 1 medium carrot
  • 2 large radish
  • 1 tablespoon fresh lime juice
  • Coriander leaves
  • Green chillies

Procedure:

  • Grate carrots and radishes.
  • Toss coriander,fresh lime juice with carrot and radish  .
  • Ready to serve

                                                            Red  Broth

Ingredients:

  • 4 medium sized carrots, cut into cubes
  • 1/2 cup black grapes
  • crushed ice to serve

 Procedure :

  •  Blend all the ingredients using little water (if required) till smooth.
  • Strain the juice using a strainer or a muslin cloth.
  • Add some crushed ice in a glass and pour the juice over it.
  • Ready to serve.

Salad Basket

Ingredients:

  • 1 big potato (boiled)
  • 1 big sweet potato  (boiled)
  • 1 cucumber (kheera) (peeled)
  • 1 tomato chopped
  • 1 cup sprouted moong dal
  • 1/2 cup pomegranate (anar)
  • 1 green chilli (chopped)
  • 3 tsp green coriander leaves (dhania patta) (chopped)
  • 2tsp lime juice
  • 2 tsp cashew cream(take 100 gms cashew (soaked overnight) and grind it to make a smooth paste)

Procedure :

  • Cut potato, sweet potato, cucumber and tomato into thick pieces.
  • Scoop them from inside.
  •  In a bowl put sprouts, pomegranate, green chilli and inner part of   potato, sweet potato, cucumber and tomato.
  • Add lime juice.
  • Mix well.
  • Garnish with green coriander leaves and serve.

                                                     Froodles

  Ingredients:

  •  1 medium sized papaya
  • 1 small mango(optional)
  • 1 cucumber
  • 1 medium sized onion
  • black pepper (crushed)
  • pomegranate
  • papaya seeds
  • 1 tsp lemon

Procedure :

  • Peel and then cut the papaya, mango and cucumber into small, noodle like strips
  • Arrange all items on a plate.
  • Sprinkle on them some finely diced onion, pomegranate seeds, crushed black pepper and papaya seeds.
  • Then, whisk together the lime juice and enjoy froodles.

                                                  Kidney Beans Salad

Ingredients:

  • 1 1/2 cups of kidney beans, presoaked overnight
  • 1 cup carrots
  • 2 cups green cabbage
  • 2 cups capsicum
  • 1 lime
  • Handful of mint leaves

Procedure :

  • First of all take kidney beans and steam them for 5 to 10 minutes to give them soft texture.
  • Chop carrots,cabbage,capsicum etc.
  • Now mix all the above given ingredients and sprinkle lemon juice and relish the salad.

Note :instead of kidney beans ,white grams can also be taken .

 Almond Butter

 Ingredients:

  • 1 cup almonds
  • 1 tsp  raw honey

Procedure :

  • Take 1 cup almonds; soak them in clean water for 4 to 5 hours.
  • After soaking process, add almonds in the blender.
  • When the blending is half done then add honey into it and mix it well.
  •  This butter can be used in salads, sprouts etc

Coconut Chutney with Coriander

 Ingredients :

  • Coconut – 3/4 cup (grated)
  • Green chillies – 3
  • Roasted black gram -1 tbsp
  • 3 tsp ginger
  • Tamarind – small bit
  • Coriander leaves -handful (optional)
  • a pinch of roasted mustard
  • a pinch of roasted urad dal
  • 5 to 6 roasted curry leaves
  • Water as per requirement

Preparation:

  • Grind coconut with roasted black grams with needed water.
  • Add roasted mustard,urad dal,curry and coriander leaves.
  • Chutney is ready to eat .

                                       Smashing Pumpkin Smoothie

 Ingredients:

  • 1 banana
  • 1/2 cup  pumpkin puree
  • 3 dates, soaked
  • 1 cup homemade almond or cashew milk
  • 1 tsp cinnamon powder
  • A pinch of nutmeg powder

 Procedure:

  • Combine pumpkin puree with ingredients in a high-speed blender
  • Blend until smooth and creamy.
  • Serve in a glass with a pinch of cinnamon ,and nutmeg and enjoy.

                                                Rainbow Salad

 Ingredients:

  • 1 cup papaya scoops
  • 1/4 cup kiwi cubes
  • 3/4 cup watermelon scoops
  • 3/4 cup black grapes
  • Soaked dry nuts almond and cashew
  • 3/4 cup apple cubes
  • 1/2 cup chopped strawberries
  • 1/2 cup lettuce or celery
  • 3 tbsp honey
  • 1 1/4 tsp ginger (adrak) juice
  • 1 1/2 tbsp lemon juice
  • black pepper powder to taste

Procedure :

  • Combine all the ingredients together in a bowl.
  • Just before serving, add honey, lemon juice and black pepper to taste.

Carrot Kheer

Ingredients :

  • 5 medium sized carrots
  • 100 gm cashew
  • 5 to 6 tbs honey
  • 100 gm almonds
  • 2 to 3 crushed  cardamom
  • a pinch of saffron
  • Water as per requirement

 Preparation:

  • Soak cashews and almonds in water for 3-4 hours. Then remove almonds skin and grind both into a smooth paste by adding sufficient water for consistency of kheer .
  • Now grate carrots finely. (use the blade with small holes).
  • Now take carrot and steam it for 3 to 5 minutes.
  • Now keep cashew and almond paste on simmer flame .
  • Add water if needed and saffron also .
  • Then add the steamed carrot.
  • Now switch off the burner and add honey and let it dissolve.
  • At last add crushed cardamoms.
  • Carrot kheer is ready to serve .

                                                   Refreshing Watermelon Salad

Ingredients:

  • 1 watermelon
  • 3 whole mint sprigs (for garnish)

Preparation:

  • Cut the flesh from the melon and cut into bite-size pieces, removing and discarding any seeds.
  • Place watermelon pieces in a large serving bowl.
  • Decorate it with a mint leaf .
  • Ready to serve .

                                    Cinnamon Pomegranate Flat Bread

Ingredients :

  • 3 cups sprouted wheat
  • 1 tsp cinnamon
  • Pomegranate seeds(250 gm)
  • Honey

Procedure :

  • Place sprouted wheat berries in the food processor.
  • Process until berries start to mash.
  • Add honey, cinnamom  and pomegranate seeds.
  • Now you can dry it on tawa on simmer for sometime ,need to flip also the bread in between .
  • Cut into desirable shapes and enjoy it.

 

                                                     Spicy Pumpkin Cookies

Ingredients :

  • 1 cup pumpkin puree
  • 1 cup fresh coconut
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon clove
  • 1/3 cup honey
  • 2 spoons raisins
  • 2 spoons cashew

Procedure :

  • Take pumpkin and steam it for 5 to 10 minutes.
  • Blend the pumpkin into the blender and later on stir together all ingredients except raisins and cashew.
  •  When well blended, mix in raisins and cashew.
  • Give ball shapes to the mixture.

                                         Rainbow Walnut Fiesta Salad

Ingredients:

 

  • 1/2 cup of red cabbage chopped
  • ½ cup of green cabbage chopped
  • 1 shredded carrot
  • 1/2 cup spring onion diced
  • 1/2 cup raw walnuts
  • 1-2 tbs of raw honey or ½  lemon
  • 1tsp fresh roasted garlic powder

Procedure:

  • Take walnut and soak it for 4 hours in clean water.
  • Now take a bowl and add red cabbage, green cabbage, carrot, diced onion, roasted garlic powder.
  • Now add lemon or honey .

  • 1 banana
  • 1 tablespoon walnuts
  • 1 tablespoon fresh coconut flakes
  • 1 cup almond milk
  • a pinch cinnamon

 

Procedure:

  • Peel off the banana, nuts, and fresh coconut flakes in a bowl.
  • Pour in almond milk.
  • Top with pinch of cinnamon
  • Add raw honey according to the taste .

 

                                       Black Angoor ka Shorba

Ingredients:

  • 2 cups black grapes or grapes
  • 1 tsp cumin seeds (jeera) powder
  • 2 tsp lemon juice
  • 1 tsp ginger (adrak) juice (optional)
  • 2 tbsp fresh mint leaves (phudina) for the garnish

Procedure :

  • Blend the grapes in a mixer to a smooth puree.
  • Add 3½ cups of water and mix well.
  • Strain through a sieve and add cumin seeds powder, lemon juice and ginger juice and mix well.
  • Serve chilled and garnish with mint leaves.

 

                                          Chickpea Salad

Ingredient :

  • 2 cup chickpeas, rinsed and drained
  • 1 small red onion finely chopped
  • 1 small capsicum finely chopped
  • 2 tablespoons spring onion
  • 20 gm coriander
  • 2 tsp of lemon

Procedure :

  • In a steamer keep the chickpeas for 5 to 10min, so that it can be tender.
  •  In a medium bowl, add all other ingredients.
  • A last add coriander  and lemon .

 

                                Honey with Kharbuja and Lime

  • 1 medium sized cantaloupe(kharabuja), peeled
  • 2 spoons honey
  • 1 lime

Procedure:

  • Slice the cantaloupe into ribbons as thin as you possibly can.
  • Drizzle honey over the cantaloupe .
  • Top with lime juice.

 

                                                Spinach with Walnut  Dip

Ingredients:

  • 1/2  cup chopped spinach
  • 1/2 cup walnuts soaked
  • 1 tsp finely chopped garlic
  • ½ cup fresh coconut milk
  • 2 tsp green chillies
  • Lemon according to taste

Procedure :

  • Wash the chopped spinach and steam for 1 minute.
  • Combine the walnuts and garlic and blend to a smooth paste in mixer.
  • Add spinach alternatively and keep blending till the mixture is smooth and thick.
  • Now add coconut milk to make smooth consistency.

                           Banana ,Peanut and Honey Ice Cream

Ingredients:

  • 1 large, slightly over-ripe banana
  • 1/2 cup Peanuts
  • 1 teaspoon honey

Procedure:

  • Take banana and freeze it.
  • Now we will make Peanut butter  by blending  roasted  peanut with honey .A smooth paste will be formed and can be used as a peanut butter .
  • Once frozen, put  banana in a food processor with peanut butter .
  • Blend it until creamy, like soft serve ice cream.
  • Now take a ice-cream cup and add scoops of this ice -cream and garnish it with pineapple or of your favorite fruits.

 

                                          Potato Salad

•          4 Potato (steamed)

•          2 tbs coriander leaves (chopped)

•          1/2 cup peas  (steamed)

•          1 green chilli (chopped)

•          1/2 tsp mustard powder

•          Roasted garlic powder  to sprinkle

 

Procedure :

•          Cut potatoes into cubes.

•          Mix all the other ingredients with it in a bowl.

•          Sprinkle garlic powder over the mixture and enjoy it .

 

                                            Pumpkin Shake with Coconut Milk

  Ingredients:

  • 100 gm ripened pumpkin
  • ½ cup of  coconut milk
  • Honey or raw jaggery
  • Cinnamon
  • Peanut butter or cashew butter

Procedure:

  • Take pumpkin cubes and keep them in freezer for 2 to 3 hours.

  • 1 cup raw cashews
  • juice of 1 lemon
  • 2 to 3 leaves of spring onion finely chopped
  • 2 cloves garlic, grated or minced

Procedures:

  • Soak the cashews in filtered water..Two hours minimum, but overnight will yield the creamiest results.
  • Drain the cashews (reserve 1/2 a cup of the water) and set aside.
  • In a food processor, blend all ingredients except spring onion . Use the soaking water to make a creamier dip. Blend until a desired consistency is reached.
  • Add spring onion on the top to garnish the dip.

  • 1/2 cup almond

  • First of all soak almond,cashews,dates and coconut for at least 2 hrs .
  • Now drain them and add almond,cashew,coconut and dates one by one in a blender.
  • Blend all the items till a smooth cream.
  •  The mixture will turn into  a lovely dark chocolatey brown color.
  •  Keep it like this for some time
  • Now make rectangle shapes out of this mixture and  it’s ready to eat .
